Abstract

We combined social science and agricultural science to learn more about the local food system and how Taylor University could support sustainability by strengthening the local food system. We carried out in-depth interviews with key informants in the food system and managed the campus garden to test out various organic management practices. A key strategy for strengthening local food systems is linking farms to institutions, such as universities, schools and hospitals. This has the potential for greater agricultural biodiversity, increased availability of fresh produce and local economic benefits. Two major challenges are the labor required for producing local fruits and vegetables and the challenge of effectively coordinating the supply of fresh food at sufficient scale for institutions.
